This salad is a-maize-ing. (ha)
This is a summery small salad that goes well with pretty much anything. I think it would be perfect at a BBQ! I served it with Summer Pasta Salad (check lunch/dinner) and it was great.
INGREDIENTS: (Feeds 3-4)
- 2 ears of corn, boiled
- 1 large tomato, seeded and diced
- 2 tbsp green onions, chopped
- 1/2 tsp dried basil
- Pinch of sea salt
- Sprinkle of pepper
STEPS:
- Cut the kernels of corn off the cob and throw everything into a bowl. Mix it up and enjoy!
* Tastes really good cold, so feel free to put it in the fridge for a bit to cool down the corn.
