Avocado Pasta

“Life is a combination of magic and pasta.” – Federico Fellini

This is a perfect dinner recipe for one, two, or a group. It’s incredibly easy and looks a little crazy, too.

INGREDIENTS: (Generously feeds 2)

  • Approx. 1 box of pasta
  • 5 avocados
  • 2 lemons
  • 1 garlic clove
  • 1/3 cup olive oil
  • Handful of fresh basil
  • Pinch of salt (I always use sea salt but either works)


  1. Boil a box of pasta (see? easy recipe)
  2. Grab a blender/food processor (nothing fancy but make sure it can handle avocado)
  3. Scoop out the avocados and chop em to make it easier on the blender. Squeeze the lemons into the blender, and throw in the olive oil, garlic clove (chop it up) and the salt. Once it’s a nice sauce, pour it onto the [already drained and poured back into pan to keep warm] pasta. Stir it all together, add the basil to the mix, and you’re good to go!
